My daughter’s first job was at a family-owned local deli and sandwich shop. One day, she excitedly jumped into the van, when I showed up to pick her up from work. “I got some,” she triumphantly proclaimed, holding up a clear container filled with cookies. At first I couldn’t figure out her excitement over chocolate chip cookies, until I examined the container a little closer. These weren’t just any chocolate chip cookies, these were chocolate chip cookie sandwiches with buttercream frosting! And oh wow did those cookies taste delicious! Insanely good!

Chocolate Chip Cookie Sandwich with Buttercream Frosting

Unfortunately, the chocolate chip cookie sandwiches with filling were so good that they were hard to come by. The shop owner only made the creme filled cookies on occasion. And the shop’s staff would start claiming them before they ever even made them out onto the shop floor for the customers! And since my daughter was usually out front making sandwiches for the customers, she was the last to spot the chocolate chip sandwich cookies.

So after one long chocolate chip cookie sandwich drought, my daughter decided to try to make the chocolate chip cookie sandwiches at home. Her first attempt was OK. The chocolate chip cookies were very soft. But the buttercream frosting wasn’t right. Good, but the filling overwhelmed the sandwich cookie.

Lightly browned soft chocolate chip cookies filled with a creamy buttercream frosting. I took a bite and sighed when the perfection of chocolate chip cookie balanced with a lightly sweet buttercream frosting hit my tongue!

Do I Have to Make the Frosting for Cookie Sandwiches?

The frosting in these cookies is what make these cream filled cookies so good. I would not sub this frosting out for a store brand unless you want a completely different cookie.

If you are crunched for time, you could buy some pre-made cookie dough to make the cookies with. The chocolate chip cookie sandwiches would still be very good.

Can I Freeze Chocolate Chip Cookie Sandwiches?

Yes, these cookie sandwiches will freeze nicely. You can make and assemble your Chocolate Chip Cookie Sandwich with Buttercream Frosting and then place in a freezer bag before placing in the freezer. As the freezer can change the color of chocolate, I would not add the mini chocolate chips to the cookie sides until after thawing the cookies to eat.
