Unfortunately, the chocolate chip cookie sandwiches with filling were so good that they were hard to come by. The shop owner only made the creme filled cookies on occasion. And the shop’s staff would start claiming them before they ever even made them out onto the shop floor for the customers! And since my daughter was usually out front making sandwiches for the customers, she was the last to spot the chocolate chip sandwich cookies.

These cookies are perfect for the special occasions as they have that wow factor with the tantalizing pillowy cream filling decorated with mini chips. But her Chocolate Chip Cookie Sandwiches are also very simple so you can either make ahead and freeze or just make and assemble at the last minute.

How to Make a Chocolate Chip Cookie Sandwich
A chocolate chip cookie sandwich with filling is just two chocolate chip cookies sandwiched together with frosting. You can also add mini chocolate chips or sprinkles by rolling your filled cookie in your favorite chips or sprinkles.
First, lay out your butter for your cookies and chocolate chip cookie sandwich buttercream frosting to soften slightly.
Make your chocolate chip cookies. You can use our favorite chocolate chip cookie recipe below. Or you can make one of your favorite chocolate chip cookie recipes. The Chocolate Chip Cookie Sandwich with Buttercream Frosting will make around 16-20 cookies, so you will have around 8-10 chocolate chip sandwich cookies.
Make sure your chocolate chip cookies are just done or slightly underdone. You will want your chocolate chip sandwich cookies to be nice and soft, so that your cookies don’t crumble into a mess when you take that first bite. Allow your cookies to cool completely.

Then place another cookie on top of the frosting making small circular motions while pressing the cookies together. This will move the frosting evenly over and between the chocolate chip cookies.

Chocolate Chip Cookies
- 1/2 cup butter
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Cream Filling
- 3/4 cup butter
- 2 1/2 cups powdered sugar
- 1 tsp vanilla
- 1 tbls milk
- 1 cup mini chocolate chips
Instructions
- Preheat the oven to 350 degrees. Lay out butter to soften for frosting.
- Cream butter and sugar for the cookies.
- Add egg and vanilla. And continue to mix.
- In a separate bowl add flour, baking soda, and salt.
- Add in the flour mixture to the butter mixture. Mix.
- Add in chocolate chips.
- Scoop a full tablespoon out for each cookie on a cookie sheet.
- Cook at 350 for about 12 minutes.
- While cookies are baking, cream butter for several minutes for frosting.
- Add in powdered sugar, vanilla, and milk. Blend
- Once cookies are completely cooled scoop out about a tablespoon of frosting and place on a cookie. Put another cookie on top and press down, gently moving the top cookie in a circle to move frosting evenly.
- Pour out mini chocolate chips onto a plate.
- Roll the sides of the sandwich cookie in mini chocolate chip cookie sandwich.
- Store in an airtight container.
