Anytime I imagine eating beef stew, I mentally place myself in front of a fireplace, with a book, cuddled under a soft throw. In reality, I’m not sure I have actually eaten homemade beef stew in front of the fireplace. But I have enjoyed more than my fair share of canned beef stew around a campfire. And hearty beef stew with radishes just seems to lend itself to winter weather and fireplaces. So I’m sticking with my vision!

In this recipe, radishes replace the potatoes, but you’re family may not even notice it! Once the radishes are cooked all day in the crockpot, in the delicious beef broth, they taste very similar to potatoes. By adding radishes instead of potatoes into your stew, you are adding variety and moving your stew into a delicious low carb beef stew arena.
Keto Beef Stew Recipe Substitution
Now, if you want to turn your hearty beef stew with radishes into a keto friendly beef stew you can sub out the corn starch in this recipe for xanthan gum, glucosamine powder or arrowroot power.
Corn starch is off limits for keto recipes. But some of my family can’t handle some of the corn starch substitutions so I stick with second best while still reaping the benefits of radishes!
Beef Stew Meat
For this recipe, I use a pack of stew meat for the hearty beef stew recipe. Stew meat is wonderful as it comes pre-cut into big beefy chunks. When you buy it wholesale, it typically comes in 1 lb packages. Using a cutting board and a sharp knife, I prefer to cut the beef into smaller chunks. Then I throw the beef into a hot skillet, browning the beef (but not cooking) to add a nice flavor to the beef and get the juices flowing. This gives your crockpot meal a kickstart.
The last time I made this I was actually running behind schedule, imagine that;), so I skipped cutting up the beef into smaller chunks. And I simply shredded the beef a bit, after the beef stew had cooked for several hours, right before serving.
Hearty Beef Soup with Radishes
This meal does have a little prep with the cut vegetables. but once the meal is in the crockpot it makes a perfect meal for walking in the door late from work. Or on a night when activities have you rushing around in the evening. And if you want to skip hand chopping the carrots, onions and celery, you can use one of the bags of frozen pre cut seasoning vegetables. At my local grocery it is labeled Mirepoix style seasoning blend! I pick up several bags, when they are on sale, to have on hand for busy days.

Hearty Beef Stew with Radishes
Equipment
- crockpot
Ingredients
- 1 lb beef stew meat
- 1 lb radishes, cleaned and halved
- 1/2 cup carrots sliced
- 1/2 cup celery sliced
- 1/2 cup onion, roughly chopped
- 2 1/2 cups beef broth
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 1 tsp salt
- 1 tbls corn starch
- 1 1/2 tbls nutritional yeast (optional)
Instructions
- Cut stew meat into bite size chunks.
- Heat a skillet over medium heat, add beef stew and brown. Do not cook beef all the way through.
- Add browned beef and any juices to crockpot.
- Chop up carrots, trimmed radishes, celery and onions roughly. Add to crockpot
- Add 2 1/2 cups of beef broth, onion powder, nutritional yeast, salt and pepper to crockpot. Stir and cover. Make sure beef and vegetables are mostly covered by broth, if not add a little more broth.
- Cook on low for 7 hours. Or high on 5 hours.
- Half an hour before serving, ladle out 1 cup of broth. Add 1 tbls of cornstarch and stir. Add thickened broth back into crockpot. Stir and cook another 15-30 minutes.
- Serve!

I am curious what the carb count would be?
Sabrina, Beef has 0 carbs and 1/4 cup of radishes has 1 gram of carbs and about .75 net carbs. If you are watching the carbs, I would switch out the corn starch in this recipe for Xantham Gum or Glucomannan. We just have some family members that can’t tolerate either, so I have to use corn starch, which does have some carbs. Enjoy!
