Hearty Beef Stew with Radishes

Ingredients

  • 1 lb beef stew meat
  • 1 lb radishes, cleaned and halved
  • 1/2 cup carrots sliced
  • 1/2 cup celery sliced
  • 1/2 cup onion, roughly chopped
  • 2 1/2 cups beef broth
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tsp salt
  • 1 tbls corn starch
  • 1 1/2 tbls nutritional yeast (optional)

Instructions

  • Cut stew meat into bite size chunks.
  • Heat a skillet over medium heat, add beef stew and brown. Do not cook beef all the way through.
  • Add browned beef and any juices to crockpot.
  • Chop up carrots, trimmed radishes, celery and onions roughly. Add to crockpot
  • Add 2 1/2 cups of beef broth, onion powder, nutritional yeast, salt and pepper to crockpot. Stir and cover. Make sure beef and vegetables are mostly covered by broth, if not add a little more broth.
  • Cook on low for 7 hours. Or high on 5 hours.
  • Half an hour before serving, ladle out 1 cup of broth. Add 1 tbls of cornstarch and stir. Add thickened broth back into crockpot. Stir and cook another 15-30 minutes.
  • Serve!
