When I make this pie to take somewhere, I don’t ever come back home with any leftovers. Ok, well there was that one time, when we had just moved into our new house and apparently the stove was not calibrated right and the temperature was completely off. Everyone knew who I was after that family reunion! But let’s not talk about that:)
Seriously though, you are going to want to save this recipe for when you want something a little fancier than cookies, but don’t want to spend oodles of time baking.
What is the Difference Between a Chocolate Chip Pie and a Cookie?
A chocolate chip cookie pie is a bit like a giant cookie, but there are a few distinctive differences. This Easy Chocolate Chip Pie has way less flour than a batch of chocolate chip cookies and there is no baking soda. So the pie tastes more like eating just the center of a chocolate chip cookie.
The edges get brown and crisp, but the main part of the pie remains very soft and chocolatey!
How to Make A Chocolate Chip Cookie Pie
Lay out a stick and half of butter to soften. And turn on oven to preheat to 325 degrees.
While your butter is softening, make your pie crust. For this recipe, I typically make this easy pie crust that is mixed together in the pie pan. Just add all the pie crust ingredients right into the pie pan.
Stir ingredients with a fork to mix up, and then press into pan. Easy! Leave pie crust unbaked.
Measure out flour, sugar, and brown sugar into a mixing bowl. Add eggs and mix. Add the softened butter to the mixture and blend thoroughly.
Add vanilla and mix.
Chop nuts and measure out the chocolate chips.
Stir the nuts and chocolate chips into the chocolate chip pie mixture. Dough will be thick.
Pour into unbaked pie crust.
Bake at 325 for 55 to 60 minutes. After 10 minutes, place the pie shield on your pie.
Check pie after 50 minutes. If it still needs to continue to cook, lightly lay a sheet of aluminum foil on top of the pie to prevent over browning on top.
Remove pie from oven and allow to cool slightly for at least 10 -15 minutes to firm up some before serving.
Tips to Baking a Perfect Chocolate Chip Pie
- Soften Butter. Make sure butter is very soft before adding to the mixture to avoid chunks of butter.
- Use Nuts First Time. This pie can be a little tricky to know when it is ready to come out of the oven. But one thing that helps it firm up just the right amount but still be chewy in the middle, is adding the nuts. Since the pie does not have a lot of flour, the nuts help the pie reach a nice consistency. So while the nuts are optional, they do help. So I encourage you to add the nuts the first few times you make this pie, to end up with a perfect pie!
- Always Use a Pie Shield. Pies need to be in the oven for a long time, so crusts are prone to burning around the edges. A pie crust shield like this one is under $10 item that you will use again and again and be so glad you bought! I like to allow my pie to cook for 10 minutes or so to give my edges a chance to cook and firm up a little. That way when you place the pie shield around the crust, you don’t smash your pretty edges.
- Don’t Overcook. As you pie gets close to finished keep an eye. If the pie still seems a little underdone in the middle but you notice the outsides looking well done, pull the pie. Your pie will continue to cook. And the center of pie is still very good even if it is slightly underdone. But you do want to avoid having a hard cookie shell on the edges.
How to Serve Easy Chocolate Chip Pie?
Chocolate chip pie is best served while it is still warm, but it has had time to cool a little! You want your pie to set, but still be warm in the center. And you can also serve it with a scoop of ice cream for an extra indulgent treat!
