I hurried to buy them as I was looking for more Carnivore type items. Thankfully, they were a hit! So then I started thinking about Mexican dishes, cause of course that is where my mind goes pretty quickly. So if you are on the Carnivore diet and have been craving Tex-Mex, you’ll love this super Easy Carnivore Beef Taquitos recipe.

Mexican Carnivore Meals
Taquitos are typically made in a small corn shell and fried. But on a carnivore diet it is all about no carbs!
With the store bought Egglife egg wraps, you don’t have to spend time making no carb tortilla shells. You can focusing on making the yummy filling. And soon you are diving into some delicious taquitos! Dip them in sour cream and you are in heaven. The egg wraps also passed the test of baking up nicely in the oven.

Are Carnivore Beef Taquitos Hard to Make?
Taquitos are not complicated to make, but they do have several steps. Using the store bought egg tortilla shells makes Easy Carnivore Beef and Cheese Taquitos easier to make, but it still takes a little time to roll the taquitos. If you have purchased my Meal Planner for the Family on the Go, I refer to these types of meals as “Fun Meals.” Fun Meals take a little longer, but since they are usually a family favorite I like to keep them in the rotation for a fun weekend meal at home! And you can be have them in the oven and almost ready in about 30 minutes!

Also beef taquitos are baked instead of fried. This makes the taquitos easier to cook and to have ready all at the same time! Plus, the ground beef taquitos are healthier when they are baked instead of fried.
How to Make Easy Carnivore Beef Taquitos
Brown 1 lb of ground beef. Drain, but don’t rinse as you will need the extra bit of good fat.
Add onion powder, cumin, taco seasoning, salt, adobe sauce, and 1/3 cup of beef broth. Stir.
Simmer beef mixture till it thickens slightly and most of the broth cooks out. Stir in 1 tbls of butter. Be careful to not overcook. With Carnivore meals, you are supposed to limit your seasonings and not use tomato sauce. So your beef mixture is already going to be less juicy. By keeping some good fat in your beef and not overly cooking our your broth, your beef mixture will be more tasty!
Turn on oven to 375 degrees. With egg wrap tortillas there is no need to warm them as they are already soft. But if you are using flour street taco shells for your kids you can place them in microwave with a damp paper towel for 20 seconds. Flip over flour tortilla shells and microwave for another 20-30 seconds. The egg wraps are kinda pricey so you can save some money by using the egg wraps for the adults and using flour tortillas for your kids.
Cut Egglife Egg White Wraps in half, for a taquito finger-food size.

Place tortilla on a plate and add one heaping tablespoon of ground beef mixture. Sprinkle on cheese.

Roll taquito as tightly as possible and secure with a toothpick.

Place taquitos on a cookie tray, brush with melted butter, and place in hot preheated oven for 12 minutes. You can flip the taquitos half way through the cooking to brown the other side.

Serve immediately with sour cream. If you are feeling more adventurous you can make this yummy Low Carb Life Keto Queso omitting the onions.

If you are on a strict Carnivore, you can also omit the jalapenos, but there are only 3 carbs in 1/2 cup of jalapenos.
Tips for Making Carnivore Beef Taquitos
Don’t Overfill Shells. Keep your beef filling to just about a tablespoon. You can experiment with using a little more, but if you overfill the shells it makes them harder to roll and secure.
Use Flour Tortillas for Kids. If you want to keep your cost down, you can use one pack of the Egglife Egg White Wraps for the adults and flour tortillas for the kids in your family. I like the “street taco” shells for taquitos

Use Toothpicks to Secure. Using toothpicks to secure the rolled taquitos ensures they stay rolled while baking. I pushed the toothpicks through once and found that worked better than trying to loop it through the shell, which often led to tearing the shell.
Fill Multiple Shells at One Time. It goes faster to fill up several flour tortilla shells at one time. Then roll all of them. Then start on the next batch.
Make 2-5 Taquitos Per Person. These taquitos are smaller. So a teen boy or grown man will probably eat 3-4. While kids or those with smaller appetites will eat around 1 or 2.
Easy Carnivore Taquitos with Ground Beef
Equipment
- toothpicks
- pastry brush to brush butter on taquitos
Ingredients
- 2 packs Egglife Egg White Wraps found in egg section of stores
- 1 lb ground beef
- 1/2 tsp onion powder (optional)
- 1 tbls butter for beef mixture
- 2 tsp Chipotle peppers in adobe sauce (optional) (only use the sauce, not peppers)
- 1/2 tsp cumin powder
- 1/2 tsp salt
- 1/3 cup beef broth
- 2 tsp taco seasoning
- 1 cup grated cheddar cheese
- 1 tbsp butter melted
- sour cream for dipping
Instructions
- Brown ground beef in a skillet over medium heat and drain. Do not rinse off beef as you want to keep some of the beef fat.
- Turn on oven to 375.
- Add onion powder, 1 tbls butter, 2 tsp of adobe sauce, cumin, salt, taco seasoning, and beef broth. Stir.
- Allow mixture to simmer to boil out some of the beef broth. Don't overcook to keep beef mixture moist.
- Take beef mixture off of heat.
- Lay out egg white wrap shells. Cut egg white wraps in half. Place a tablespoon of beef in the middle of each egg white wraps. Sprinkle with cheese.
- Roll up egg wraps and secure with toothpicks. Melt butter and brush on egg wrap taquitos.
- Bake in oven for 12 minutes. Carefully turn taquitos after 6 minutes so they can crisp on the other side.
- Pull out of oven and allow to sit for a few minutes. Serve hot with sour cream.
