One memorable holiday get together someone brought a pecan pie. The pecan pie was so underdone that it was more like a buttery sauce with pecans floating in it. While this pecan pie recipe may be overly simple, it is delicious. And it turns out perfectly with only a few tips and tricks!
How to Make Family Pecan Pie
Make or thaw your pie crust. For one pie crust pies, I love to use this easy pie crust recipe as you make it right in the pie pan. No rolling required!
Melt butter and then allow butter to cool for a minute. And if you are using a KitchenAid mixer, attach the wisk attachment as all the pie ingredient will mix better.
Place eggs into mixing bowl and add sugar. Wisk together.
Add melted butter to egg and sugar mixture. Mix.
Lastly, add corn syrup and salt and wisk some more.
Chop up pecans til you measure out one cup of chopped nuts. Pour the nuts into the mixture and hand mix.
Pour pecan pie filling into prepared uncooked pie crust.
Place in preheated 375 degree oven. I cooked my pie at 365 degrees. If your oven runs a little hotter, like mine, than you may want to adjust from 375 to 365.
After about 10 minutes, I place a pie shield on my pie crust to prevent crust from burning.
At 40 minutes, check your pie. Pie should be jiggly but set. If the center is not set, cook for another 5 minutes and recheck. Don’t overcook as pie with start to rise and crack and then deflate in the middle.
Place pie on the cooking rack. Allow to cool before cutting.
Tips To Making Pecan Pie
- Don’t Overcook Pie – If you overcook your pie it will bubble up and crack. And then it will fall. It will still taste delicious, unless you really overcooked your pie, but it will have a sunken spot in it. To avoid this rising and falling, pull your pie out of the oven when the center is set, but still has a little jiggle to it.
- Use Real Butter – Make sure that you use butter and not margarine.
- Allow Butter to Cool – Anytime you add hot butter to a mixture that has raw eggs, be careful. You don’t want to “fry” your eggs and end up with little pieces of egg in your batter. Melt your butter and then allow butter mixture to cool, while you mix your eggs with sugar.
