Next step, finding great beef recipes to try out all your new beef cuts. No problem. I have 20+ no-fail recipes using a variety of beef cuts that will turn out beautifully. These easy delicious beef recipes for a quarter cow will highlight all the benefits of purchasing wholesale freezer beef!

Buying Wholesale Freezer Beef

Years ago, I realized I had a problem. I would open my stocked freezer and stare at all the wide variety of beef cuts. And they would stare back at me. I would grab another package of ground beef…and close the freezer.

This isn’t working. I have ALL these beautiful cuts of beef and I am still ONLY cooking with ground beef.

Maybe you feel a bit like this. Your hand trails lovingly over the generous steaks, the hunk of chuck roasts, and the beefy briskets. But you just keep reaching for the same comfortable, stable ground beef.

Granted ground beef has been good to you. Ground beef is budget friendly and has stood the test of the time. But now you want to sink your teeth into a juicy steak or taste the mouth-watering flavor of brisket.

But you’re not sure where to start or what beef recipes to try! Both the wonderful AND the slightly intimidating part of purchasing wholesale local beef is the wide variety of beef cuts

So I created this post to give you lots of proven recipes to try that are wonderful and turn out perfectly!

These beef recipes for a quarter a cow are made from a variety of beef cuts. Choose the beef cut you want to use and then scroll through to find a recipe! And this works great if you bought a half or whole cow too!

Round Steak or Cube Steak

Round steak is a delicious budget friendly cut that comes from the back portion of the cow. (And yes, the term cow actually refers to a female that has had a calf, but I want to use terms that most non-cattle farmers recognize.)

Round steak comes in one big piece of meat, but it has sections to it. And it may or may not have the round bone in the steak. One round steak will make a nice meal for a family. You have to try the Marlboro Man steak sandwiches! SO good!

Cube Steak is tenderized steak. It is often round steak that has been tenderized. But I have learned that cube steak can be other types of steaks that have been tenderized. For cooking purposes, I find cube steak and round steak very similar and will interchange them for recipes, based on what I have left in freezer.

Marlboro Man Sandwiches – You have to try Marlboro Man Steak Sandwiches! These are a family favorite for a special weekend meal! Make sure to have lots of butter!

Crockpot Beef Stroganoff – Yummy comfort meal that comes together easily for a week night meal.

Chicken Fried Steak – Think fried steaks and mashed potatoes with a creamy gravy smothering everything. Yum! Chicken Friend Steak takes a little time so it is definitely a meal when you want to celebrate or make a special meal for your family!

Stew Meat

Stew meat is beef that has been portioned into nice chunks that are perfect for stews and grilling with veggies! You can typically request stew meat in one lb or two lb portions.

Beef Stew with Radishes – Heart stew that is perfect for fall and winter! And with a low carb twist as it is made with radishes!

Shish Kabobs – When your garden or local market is overflowing with fresh veggies, it is the perfect time to make Shish Kabobs.

Flank Steak or Sirloin Tips Steak

I love these cuts. In my extended family, the men always grill the steaks. So I was a little intimidated to even try grilling steaks. And then along came Flank Steak and Sirloin Tip Steak. These steaks are perfect for the newbie griller. They are smaller and only take a few minutes on the grill. And they are meant to be pink inside when cooked so you don’t have to worry about undercooking them.

Steak Salad – Summertime is perfect for a steak salad! Love the cold crisp greens with the perfectly grilled and seasoned steak slices!

Taco Carne Asada – Tacos made with flank steak! So flavorful! You can watch the video here where I make it.

Ribyeye Steak

You will have to try all the steaks to see which is your favorite. But I do love a Ribeye steak. And this cheesesteak sandwich recipe is delicious!

Cheesesteak Sandwiches – When ever I get a chance, I order cheesesteak sandwiches. So I figured, I had better learn how to make them!

Steak Quesadillas – If you have steak leftovers from steak night, then you need to make steak quesadillas. They are the perfect way to use up those yummy leftovers and enjoy steak two nights in a row!

Chuck Roast

Chuck Roasts are one of my favorite cuts of beef. They just cook so effortlessly in the crockpot! LOVE them. So if you are wanting to start somewhere with cooking your beef recipes for a quarter cow, then I would start with the Chuck Roast!

Mississippi Pot Roast – Your family or guests will think you spent hours in the kitchen, when in reality you just threw everything in the crockpot! So good.

Crockpot Italian Sandwiches – The pepperoncini in this recipe makes such a heavenly sandwich! One tip, I have yet to find the Mezzetta Italian Mix listed in this recipe. But my sandwiches turn out just fine without it. But if you live in a bigger city, maybe you will have better luck:)

Brisket

Brisket comes in a big long hunk of beef! You can have your brisket cut in half or make a whole one and feed an army. Bricket needs to be marinated and then cooked for a long time. Or you can use your smoker and your favorite rubs. But the steps to making a mouth-watering brisket are not complicated. And a brisket makes such a nice amount of savory beef, that it is the perfect cut to make for a big family get together or the holidays!

Pioneer Woman Brisket – Try this recipe for a brisket that is delicious every time! Two hints, Pioneer Woman uses beef consommé in her marinade, which sometimes I have trouble finding. You can just use beef broth. And if you want brisket to be ready on time, make sure to plan a few days ahead as the brisket needs to marinade for 24 hours!

Shoulder Roast

Shoulder Roast is similar to a chuck roast except that it breaks down into chunks or slices instead of shredding like a chuck roast. It is great for making a pot roast!

Beef Shoulder Roast with Vegetables – This pot roast cooks in the oven, making its own gravy. Add in the carrots, celery, onion and potatoes for a whole meal. I used Yukon potatoes as those were suggested in another recipe as being good potatoes that hold up well to long cooking times.

Short Ribs

Short Ribs are short ribs that come about four in a pack. They are not like pork ribs that come in a big rack. They have a fair amount of fat of them so they are a very juicy meat. My husband really loves them.

Braised Short Ribs – Once again, I am using a Pioneer Woman recipe. This recipe works well. Just make plenty as the short ribs will have to be trimmed of the fat once they have cooked. And use real rosemary if you have it! I do substitute bacon for the pancetta. But if you are feeling wild and crazy, try the pancetta!

Steak Night
