Place uncooked chicken breasts in crockpot in the morning. Pour chicken broth over chicken breasts. Cook for 4 hours on low or until 160 degrees.
Cut chicken into small bite size pieces. Add to a big mixing bowl.
Pull out pie crust from fridge or freezer to thaw.
Place frozen vegetable mix in bowl with chicken to thaw.
Chop onions. Saute in butter in small skillet.
Add sauteed onions to bowl with chicken and vegetables.
Mix can of cream of chicken soup and half and half. Pour over vegetables and chicken mixture. Stir together. Add salt and pepper.
Unroll pie crust into pie pan. Pour chicken mixture into pie crust.
Add second pie crust to top of the pie. Slit top of pie crust.
Bake pie at 425 degree for 40 minutes.
