Carnivore Philly Cheesesteak

There is a wonderful country store in my neck of the woods, and I work there whenever they need a little extra help as the store is always busy. And with all the homemade pies, cookies, breads, and delicious sandwiches, no wonder. One day as I checked out the hundredth person purchasing their homemade goodie that was unfortunately gluten-laden, I was dismally thinking about my Carnivore lunch. And then it happened. I had a person check out purchasing a Philly Cheesesteak, without the bun. Why hadn’t I though of that? A Carnivore Philly Cheesesteak!

Hurriedly, going on break for lunch, I put in an order for a Philly Cheesesteak, without the bun. And I waited. Would it still taste like a Philly Cheesesteak? Would all that yumminess still be there? Yes!!

To my taste buds wonderful surprise the cheesey goodness of the hot steak, chopped thin and grilled with onions and green peppers slathered in melted cheese tasted magnificent!

Making Carnivore Philly Cheesesteak at Home

So I decided to make it at home. Using ribeye steak, I sliced thin, I was able to whip together a flavorful meal that is focused on just the goodness of beef.

Now this meal does crossover to the Dirty Carnivore side with the additional of onions and green peppers. But onions and green peppers are still very low on carbs. And with how this meal comes together, you can easily adjust how much onions or green peppers are in each persons’ meal.

My daughter isn’t a big fan of green peppers, so I always go light on the green peppers. Meanwhile, my husband wants all the cheeses, so he gets more cheese and less veggies.

How to Make a Carnivore Philly Cheesesteak

First slice your onions and green peppers if using. Add butter to skillet and heat. Add sliced green peppers and onions and cook for several minutes.

Meanwhile, slice your Ribeye thin. Slice away excess fat, but not all fat to keep your steak bites juicy. Remove the cooked onions and peppers from the skillet. Add the steak sliced.

Cook steak slices for several minutes stirring, until pink disappears. Add in salt and Worcestershire. If you want to use less Worcestershire you may. Don’t overcook your steak as you don’t want your beef to be tough.

Add your onions and peppers back in and stir all together. Portion into 3 or 4 section (depending on how many you are feeding). Then add cheese on top. Turn down heat to low and cover. Wait 2-3 minutes or until cheese melts!

Understanding the Carnivore Diet

The carnivore diet intrigued me for its simplicity. Primarily, it consists of meat, fish, and animal products, excluding carbohydrates and plant based foods. 

Initially, this plan sounded daunting. I wondered about its difference from the keto diet, which also prioritizes low carbs but includes more variety, allowing for certain veggies and dairy. Both approaches aim at weight loss and improved health markers, yet the carnivore diet takes things a step further by eliminating virtually all carbs.

For someone used to the flexibility of keto meal ideas, adopting purely carnivore meals with steak required a mindset shift. But my husband has had such good success on the diet including weight loss, less joint pain, and no longer snoring! Yay!

So I have tried to be creative, embracing the change, and create satisfying carnivore dinner ideas, from hearty casseroles to simple skillet meals.

What is a Philly Cheesesteak Sandwich?

The original cheesesteak sandwich referred to as the Philly Cheesesteak is from Philadelphia, Pennsylvania. Everyone seems to be in agreement that a cheesesteak sandwich made in Philadelphia is a Philly Cheesesteak, while a cheesesteak sandwich made anywhere else is just a cheesesteak. That’s fine by me. I just want to eat them!

But if I am ever in Philadelphia, I will definitely make the effort to try a Philly Cheesesteak original! The authentic sandwich is made of shaved Ribeye beef, carmelized onions and white cheddar cheese on a toasted Amoroso’s bun, which is an Italian hoagie.

What is the Best Cut of Beef for Cheesesteak?

Cheesesteak sandwiches are typically made with thinly sliced ribeye. But as ribeye can be pricey, you can use flank steak as a perfect alternative. I love cooking with flank steak as it is reasonably priced and very easy to handle. Cube steak is another possibility. However, I prefer the ribeye or flank steak.

If you are purchasing your beef in the store or from a butcher you can ask your butcher to thinly slice the beef for you at no extra cost.

Since we raise our beef, I’ve learned a few tricks about beef. While your ribeye or flank steak is still partially frozen, trim your steak of most of the fat, then thinly slice. If your steak is fresh or thawed, you can freeze your steak for 20-30 minutes and then slice. Slicing your meat while still partially frozen works well for a lot of cuts of meat, so feel free to use that tip later!

What Goes on a Cheesesteak Sandwich?

Do you know some people put cheeze wiz on cheesesteak sandwiches? Not on my watch!! And certainly not on Carnivore!

Ok, so there is a variety of things you can add to your Carnivore Cheesesteak.

  • Steak
  • Carmelized or cooked onions
  • Green Peppers
  • Mushrooms
  • Cheese (white cheddar or provolone)
  • Lettuce
  • Tomato

Typically cheesesteak sandwich recipes call for steak, onions, and cheese. But green peppers and mushrooms are a frequent topping! Both green peppers and mushrooms are low in carbs, but I would suggest choosing one or the other to keep your carbs as low as possible.

Ingredients

  • 2 lbs Ribeye (or Flank steak) sliced thin
  • 2-3 tbls butter
  • 1 small onion sliced (optional)
  • 1/2 green pepper sliced (optional)
  • 1 tsp seasoning salt
  • 1 tbls Worcestershire sauce
  • 1/2 tsp salt
  • 4-5 slices white American cheese (or Provolone)

Instructions

  • Thinly slice ribeye steak. This is best done when steak is still slightly frozen. Allow to finish unthawing as you cut and cook veggies.
  • Slice green pepper and onions thin.
  • Add 1 tbls butter to skillet over medium heat.
  • Cook green peppers and onions over medium heat until onions become translucent. Transfer to a plate
  • Add another tbls of butter in skillet. Add ribeye steak.
  • Sprinkle beef with seasoning salt, salt and Worcestershire sauce. Cook for a few minutes, being careful to not overcook.
  • Add onions and peppers back into skillet. Stir together.
  • Divide beef and veggies into 4-5 equal section in skillet. Top with cheese. Allow to melt.
