Keto Bacon Cheeseburger Soup
I really like eating Keto or Carnivore throughout the week to stay on track with my health and feel the best. But I struggle to find meals that also satisfy the rest of the family. However, this rich, cheesy soup is both healthy and delicious. With the flavorful bacon and the decadent creaminess of cream, the only thing your family will wonder is if there is more soup for seconds!
For my Carnivore Bacon Cheeseburger Soup, I tried several different recipes before finding the right balance of thickness ratio. I used my Keto Bacon Cheeseburger Soup and only tweaked an ingredient or two to make a soup that is rich and creamy and totally on the Carnivore diet plan!

How to Make Carnivore Bacon Cheeseburger Soup
Carnivore Bacon Cheeseburger Soup comes together easily and uses basic ingredients that most people will have on hand.
Fry 4 pieces of bacon, over medium heat on stovetop, in the bottom of a soup pot or Dutch oven. Place bacon on a paper towel to cool. Drain out most of the bacon grease while retaining a bit still in the bottom of the pan.
Add butter to soup pot and add 2 pounds of ground beef. Brown the ground beef. Drain the beef. This is my favorite cooking tool for browning and chopping up ground beef!

Add paprika, salt, cream cheese, and a little beef broth (less than a 1/4 cup). Stir until cream cheese melts. Don’t skip this step. The cream cheese will melt without lumps if you add it now BEFORE adding the rest of the beef broth.
Pour in beef broth and stir. Bring soup to a gentle boil.

Turn heat down to a simmer. Add your heavy cream. Grate cheese and add cheese to soup. Stir soup at a simmer until cheese is melted. Soup will continue to thicken.

Garnish soup with bacon.
Tips for Making Bacon Cheeseburger Soup with Cream Cheese
Shred Your Cheese. When you add shredded cheese to a soup or dip, it is best to shred the cheese from a block of cheese. If you use pre-shredded cheese it has anti-caking agent causing it not to melt and integrate as easily into your soup.

Retain Bacon Drippings. After frying bacon, remove bacon and excess bacon grease. But keep some of the yummy bacon drippings to add tons of flavor to your low carb cheeseburger soup!
Make Extra Low Carb Soup. Keto Bacon Cheeseburger Soup tastes wonderful for several days, if kept in the fridge. So make the whole batch or even make extra. It is so creamy and cheesy that it makes a quick low carb lunch that you will look forward to enjoying! And it just gets better each day as it reheats beautifully.

Carnivore Bacon Cheeseburger Soup

- 1 soup pot or Dutch oven
Ingredients
- 4 pieces bacon
- 2 tbls butter
- 2 lbs ground beef
- 8 oz cream cheese softened and cut into small pieces
- 2 tbls yellow mustard
- 1/2 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 4 cups beef broth
- 1/2 cup heavy cream
- 4 cups cheese shredded
Instructions
- Fry bacon in the bottom of soup pot or Dutch oven on medium heat on stovetop.
- Remove bacon from skillet and set aside. Drain most of the bacon grease from pot, leaving a tablespoon or two in bottom of pan.
- Place butter in bottom of pan. Then add ground beef and brown ground beef.
- Drain ground beef.
- Add paprika, mustard, garlic powder, salt, and cream cheese. Stir over medium heat til cream cheese melts.
- Add beef broth. Stir and bring to a gentle boil.
- Add shredded cheese and heavy cream. Simmer. Stir til cheese is melted.
- Garnish soup with bacon.
